I have a Marantz SA14S1 SACD player. If I connect the coax or optical digital output to an input on my PS Audio DAC, will I lose the DSD layer in the process?

Only the CD/PCM layer will be decoded/converted by the PS Audio DAC via digital coax or optical. SACD is a proprietary/protected format so the DSD layer will not be conveyed to the PS Audio via digital, the signal can only go directly from the Marantz to your preamp via analog. Or you may get a universal player with HDMI digital output so you can connect it to your PS Audio I2S input.
