Question Venison Steak

My neighbour came over today and dropped off what he told me was 2 pounds of venison steak it looks like a small chuck roast with a bone in the centre of it any suggestions on how too cook this. Spices sauces ect.

It is thawing in the fridge. When I can see if it is steaks or a roast I will. I know what to do with the steaks but if it is venison roast

With exotic game meats like venison that are low in fat, one needs to commensurately reduce the heat and/or cooking time.

Two pounds isn't very big for a roast, but this isn't a cow.

Do you mean it has a bone in it like a leg of lamb/lamb shank?

You could butterfly it and press it out flat and cook it like a steak. I'd cook it under a low heat to bring up the internal temperature to about 115 deg F, let it rest for 15 minutes and then give it a fast high heat sear and be done at about 135-140 medium doneness. Don't over cook it. Then slice it against the grain and serve. As far as seasoning is concerned, you can salt it lightly and add a mixture of garlic and onion powder and fresh rosemary.

Alternatively, if it is a shank, I would cook (braise) it at about 250 degF for a long time as those cuts tend to be tougher. Think lamb shank here.

I used to deer hunt and personally I don't like venison.

If it isn't the loin I used to have it made into sausage, brats or snack sticks, but that doesn't help you.

google venison marinades. or turn it into a chili or stew.

I like the stew idea also Doug - make a simple vegetable/venison stew and slow cook it for 8-12 hours. Cut up the meat into 1" cubes. Flour/brown the venison, add vegetables and beef broth, and whatever spices you like (I like to do a bay leaf or two along with basil, garlic/onions, oregano, black/red pepper), and just for kicks, throw in a 1/4 cup of whiskey/bourbon (nothing high end). That should work itself out into something you would like!

Definitely a roast. Lean meat so you need to keep it moist and not be afraid of another fat source. And That is the full extent of my cooking advice!
