Nice Cans?
Not cans…but Sony WF-1000XM3 True Wireless In Ears.
Not as sophisticated as a wired set…Bluetooth is lossy… With the XM4 on the horizon, these will certainly become cheaper. They haven’t disappointed yet and I find them to be good value for what they are. My wired set is the Audeze LCD XC (2020 edition, used with the Roon preset). Although it is a heavy beast, it makes me forget I’m listening to headphones. The 2021 edition does feature significant changes to the driver and cups and apparently has now entered the realm of endgame closed headphones. Sometimes it is preferable to go for higher priced gear than to purchase many cheaper ones before you find the right one. The XC’s are priced outside of your budget, but maybe some used 2020 editions will become available at more palatable pricepoints. For wired - I love the Meze Empyrean paired with something like a Chord 2Go/Hugo2 combo. Portable-ish and sounds sublime. Detailed without fatiguing - and this expansive soundstage that spreads the performers wider than the ears.
For wireless - I am not very keen for those with captive batteries - even though I own a few. From the cheapest - Xbox, PS5 Pulse, B&W PX - the PX sounds decent especially through the wired connection but if you want wired, the Meze Classics 99 sounds much better. The PX does offer a (reasonable) level of noise cancellation but not as good as the Bose or Sony. My main gripe with these wireless headphones is - what happens when the battery no longer holds a charge. The solution - a Shure 846 (or any of their in ear monitors will work) plus the Shure True Wireless Adapter Set which adds wireless functionality to the really good set of in ear monitors. HiFiMan has a similar approach to their wireless as well - with a plug in adaptor

Ear Buds?
I moved around a lot when I was wearing a uniform and, long story short, the ear plugs that I wore over the years, to attenuate the jet engine drone, caused some kind of a reaction. Now, when I put anything like that in my ears, they itch to the point of distraction...so ear buds are out.
I'm definitely looking for something that sounds good over the sonic spectrum and doesn't "leak" sound. This would seem to mean that an over-ear closed-back unit is what is needed...but the question is what do you give up with wireless headphones? Some reviews seem to suggest that wireless give you all the sound that one gets with wired...and others suggest that a bluetooth signal subtracts from the sound (lossy). If anyone who uses a decent pair of wireless over-ear closed-back headphones would care to share, I'd appreciate your thoughts...especially if you've compared them to wired units. Thank you all for your time

I use wireless in-ear monitors (IEMs) for working out, and occasionally for travel. I’ve also used over-ear full sized wireless. In general my experience has been that the sound can be good, especially for non-critical listening, but not as good as equivalent wired for home listening. All other things being equal, in a quiet listening session, wired will sound better than wireless. And of course with wireless, there are inevitable compromises necessary to make room, physically and in the cost, for the electronics and batteries. However there are always trade offs, and there’s a lot to be said for the convenience of wireless, and the technology has gotten pretty good in the last few years.

A good IEM with external Bluetooth adapter, preferably with replaceable batteries, is a good option. You would lose the ANC and give up a little bit of mobility and convenience though. I'm a wired 'phone guy. Senn's are well made and good value. I have been v.impressed with the 560s but they are open backed. The 600 series runs I believe at 300 ohms so you will be tied to am amp.
