Default Any cooks here?

Just wondering if any AA members like to cook.

This is what I had for dinner tonight:



Quail - tunnel boned and stuffed with mushroom, thyme, and calvados. Smoked over apple wood and served on a bed of lentils with cherries and fresh apple (to tie in with the apple smoke). Yes, you can admire my 1337 tunnel boning skills - I managed to tunnel bone the little bastard with no holes, and absolutely neatly!

(Edit) Quick recipe:
- 4 quails
- 30 mushrooms, diced into 1/2cm cubes
- 1/2 onion
- 1 clove garlic
- 10 sprigs of thyme, leaves only
- 1 bay leaf
- 1/2 cup Calvados

Tunnel bone the quails (i.e. remove the bones whilst leaving the carcass intact). Suture up one end. Prepare the mushroom stuffing: saute the onion and garlic, then add the mushrooms. Continue until browned. Add Calvados (+ more to taste), season with salt and pepper. Allow to cool, then stuff the quails. Suture up the other end. Smoke at 150C until internal temperature reaches 65C. Serve on lentils.

Oh, since you are enjoying the pictures, here are a few more ...



Pollo planchado. Brine the chicken, then spatchcock it. Cook over a BBQ via the direct grill method, with a brick on top.



Thomas Keller's Southern Fried Chicken. Yes, it is an American recipe. And yes, I am Australian. What can I say

Sole a'la Meuniere. Yes, it is a French recipe ... but my interpretation of it is pretty modern Australian It is garnished with lemon supremes, viola, and tulip. Yes, tulip ... it is edible.

(edit) Recipe:
- Sole
- Flour
- Butter

Cut slices into the sole. Dredge in flour and allow to rest for 10 minutes. If you try to fry it immediately, the flour will fall off and burn in the pan. Heat up some olive oil and butter (1:1 ratio), and fry the sole, presentation side down. Use a spoon to baste the other side. After 4 minutes, turn the sole over (CAREFULLY!) and cook the other side for 4 minutes, whilst basting the top. Remove with a fish spatula. At this stage the fish is very fragile, so be careful or it will break. I used 2 fish spatulas.



Malaysian Curry Laksa. I was born in Malaysia

(edit) - sorry, no recipe. You need the secret ingredient, which is Malaysian laksa paste. My mum brought some for me the last time she visited. Unless you know a Malaysian who can do this for you, you're out of luck. The laksa pastes sold in Asian grocers is insipid by comparison.
