My concerns about effectively smoking in the snows of Maine were completely unfounded. Did two birds yesterday - one 19 pounder brined in Dan Gill's Brine (with added ginger and maple syrup) and basted with butter and maple syrup The second a 12 pounder rubbed with an incredible homemade jerk paste and injected with same thinned with Appleton rum. Both were cooked over a combination of peach, oak, and allspice berries.

Question? I have a traeger grill also! How do add or place the berries? You just can't add them to the hopper??

Hi Ken.

I always mix my pellets in a separate container before putting them in the hopper. That way I know I have an even blend of the desired flavorwoods. The Allspice berries go right into the mix with the pellets.

For the turkeys I used BBQer's Delight Peach Pellets (60% oak/ 40% peach) and about 6 ounces of berries to 10 lbs of pellets. I'm guessing on the berries because I go by look of the mix rather than measuring.

For stronger jerk smoke flavor, I use a 50/50 mix of Lumber Jack 100% Cherry and Lunber Jack 100% Hickory and add the allspice.

Whatever you do, buy the berries on line in bilk. Grocery store prices are ridiculous.
