Well after much deliberation I went to Sonoma and handled them. I have short stubby fingers with a touch of Rheumatiz and these felt the best

They are not as pretty as the Shun but they felt the best in my hand

After buying a few Global and Shun knives, I gave away all of my German blades and bought more Shun. If I had to just have one knife, however, it would be a Global Chef. Easy to sharpen and indestructible.

After I gave away the German and Shun knives I bought Japanese kitchen knives, namely the Shingfusa (although there are many other excellent makers). Here are some links:
