Talking Smoked Turkey

Well it is that time of year again. I have to put my order in for an Amish turkey.

i have never smoked a turkey. how long does it take and temp?

I like frying turkey's that is fun...

Hi Joe it is usually do it around 375 to 350 depending on the wind. So I am not really q in the bird . It takes about 5-6 hours. I brine the turkey for about 48hrs before and then let er rip. I like using pecan as I can use more of it than hickory . I often do a 20lber.
pecan is a bit lighter than hickory and a little more forgiving on white meat. The recipe I use is Shakes Honey brined. Whole Turkey - Honey Brine - The Virtual Weber Bullet

I've only done a couple in my newest smoker (Pitmaker Safe). Do it at 250 for about 7 to 8 for a 18 lb bird. I used Cherry. Cover the breast with foil after a few hrs. (white meat wants to dry out quicker). Turned out really nice.
A few weeks ago my neighbour brought over a dozen legs and
attached thighs so I smoked those for him. Didn't turn out as nice as the whole bird did. I think because the skin is cut it pulls back and then losses moisture.

For Thanksgiving ( we already had ours), I prefer a traditional roast turkey with all the trimmings.

Ooops this is for a party on Saturday. I will take it out Friday,rinse it and let it air dry in the fridge overnight.
