Default St. Louis Style Ribs !
I buy my St Louis styles pre cut at the butcher. I then remove the silver skin from the back of the rib. My new technique is to rub them once( unlike shoulder which I rub twice) . when the ribs are done I take them out of the smoker, sauce them,them but them in my gas grill that I had on high and just turned off. Results look like this !

looks delish !!!! Dave's famous Ribs (a chain I believe) actually serves up a nice slab of those babies.

You're butcher will remove the membrane (silver skin) if you ask. At least the ones I deal with do.
