Here we have it in the brine. It's so big I will have to flip it a time or two. I will take it out Friday night to let it dry.

Back it goes into the fridge to let the skin dry out...havent done this step before but Chris at TVWBB does it to get crispy skin. I put a can of Dr. Pepper to show the size of this dude Tomorrow it will get a melted butter bath and a Weber Poultry dry rub
