Default Bracciola anyone?

Just finished up a sauce pan of bracciola and marinara w/cabernet. Simmered all afternoon. Some locally made (we live in a very Italian area of the world) pasta and Yum!! Haven't made bracciola for years. Had forgotten how good it can be. Should have taken pictures, but it did not last long enough. Matched up with a decent bottle of red from Languedoc. Typing with the last glass at hand. Burp. Life is good.

I'm salivating on the train ride home just thinking about it.

The wife usually makes bracciola every few Sunday's - one of my all time favorites.

If you're from our part of Italy (puglia) bracciola is eaten on Sunday's as a second course (secondo) after the pasta course (primo). And to this day we follow that tradition in our home in the new world.

I'm just not sure though how to break it to my wife that my mom's version was better

Well, I'm from the Irish/English part of Italy......... But it is hard to beat good Italian food. We are lucky to live in the part of the world we do. My former mother in-law and her sister's family were from Genoa and they made such wonderful food. My intro to the 'real' stuff.

I'm thinking that the secret of the best bracciola might be one you are better off keeping to yourself.

My uncle lives in Genoa. The food is a bit different in the north. In the south it's basically fantastic peasant food. The north is more refined, heavier cream sauces, etc. Either way, every time I get to Italy, regardless of the area, the food is outstanding. Mangia!
