Default Grilling on wood

My wife and I have been grilling over the winter and now spring veggies and fish on cedar planks. Soak the planks well, get the gril nice and hot and close the lid. I find that having the wood burn a little adds just that much more flavor.

Did a few pieces of salmon last night with some Asparagus and it was great!

I have not mastered the use of wood chips in a container inside the grill as a source of smoke. The plank directly on the grill seems to be much better.

Anyone have hints on how to use wood chips with better results?

I use wood chips on my grill. Soak them for them in water for an hour before. Place in smoker box in a corner right under the grill. Crank grill all the way up around 10mins. You should see blue smoke coming from from the holes in the box. Turn the burner under the box to low medium. If grill is at right temp start grilling. Leave cover closed in between flipping/stirring to let smoke build up. I have a bottle of water close by if I see flames from smoker box I douse it lightly and turn down temp. I have tried various woods if you want to know more.

Is the smoker box something specific? I have only ever used aluminum foil for the wood chips. Maybe that is why I find the plank to work better?

The GrillPro-00185-Stainless-Steel-Smoker-Box that can be found like at Walmart is the exact one I use. Won't look so pretty after a couple of uses however

You should try grilling on charcoal. no need for a smoker box. a natural smokiness that using a gas grill can never duplicate

Firing up the smoker in a few minutes, with hickory and white oak for 8 slabs of ribs and then towards the last 2 hours a little peach wood..

If you have a gas grill and want to get closer to emulating 'smoking' and have had difficulty with the smoker box approach (like me - it's either on fire or not smoking), then try a pellet approach.

I've had fantastic results with the A-Maze-n smoker tubes:
