Arctic Char

I usually don't get excited by food that much and certainly not enough to post about it but tonight I felt inspired to do so. Had one of my favorites fishes tonight, Iceland caught Arctic Char. We usually cook our fish in foil on the grill and it usually comes out perfect. Tonight was no different, the fish came out superb with a very fine, delicate texture and my wife's mango/pineapple/lemon dill sauce sent the taste buds into celebration with every bite. The side of sautéed garlic, shallots, parsley, spinach and steamed asparagus partnered up with some Orzo (pasta) brought the whole dish together for one delicious, healthy and satisfying meal.
