I have both the new pressing along with the 2 LP set from the the Beatles mono box set. They both are nice albeit with a different presentation. To my ears, the mono pressing is a little more immediate, somewhat more of a studio presentation, very clean (for the white album) with nice mid bass. The new stereo version is just as quiet of a pressing, sounds more spread out and a little more forward in the upper ranges. Can’t go wrong with either….if I had to settle for one I would likely go with the mono version but it’s very close, they’re both excellent. Can’t comment on the demos, only have the actual album.
