I think I'm going to love this forum,...music, stereo gear, grilling, smoking (food as well as cigars, etc...) Very dangerous place I think; is meant to indulge all my vices <LOL>!
On a more serious note....my old smoker/wood grill combo gave up the ghost recently and finally developed internal rust flaking, etc...that could not be wire-brushed, sanded and dealt with, SO....as of last week, this Old Country BBQ (best of Texas!) "Brazos" multi-hundred pound 1/2" thick welded steel beast has shown up to take up the duty. It can do full offset smoking as well as indirect heat/medium-high smoking and full-on grilling with smoke immersion (closing the cover & by volume). I use various hardwood blends that I put together depending upon meat, seafood and/or veggies involved.

I think Texans know very well how to smoke and grill steaks, etc.
I love firewood too.
