Both are easy lexicon for end-users to distinguish the delta-sigma Gungnirs and Bifrost versions from their Multi-Bit versions:
Here is the etymology as it evolved by the gang over at Head-Fi, where Schiit has a sponsored forum:
Gungnir Mult Bit > GUMB > Gumby
Same for the original (version 1) Bifrost Mult iBit > BIMB > Bimby. Bifrost 2 is now only available as a multibit DAC.
The TOTL Schiit DAC, Yggdrasil, aka Yggy, was only ever availble as a Multibit DAC.
