If I put a stick through it, usually it is Med themed... Greek-ish marinated chicken, mushroom caps. Fresh Tzatziki on the side. If I get a real wild hair I'll make a flatbread (Pita-like) and grill those to order.
Sikh Kabob also good, Indian-style ground lamb on a stick. Served with grilled lemon wedge and raita ("Indian ranch dressing").
