This Henckels 7” Santoku Chef is perhaps my favorite because it’s light, decently balanced, and stays extremely sharp (of course I do tend to obsess about my knives’ edges).
Even though this is their cheaper series, I find I reach for it more than the other Henckels I have or even my trusty Classic Wüsthof 8” Chef that I’ve had forever.
You can find these for less than $60!
