Another vote for the Technics 1200G.
A big advantage for your situation is the easily changed headshell on the 1200G so you can use multiple cartridges (I have 9 of them). You can stay with MM for your everyday listening and swap out to an MC for more critical listening. The new 1200G is a terrific piece of gear. Everything very much upgraded from the original models.

There are a number of excellent phono-preamps in the sub-$2K range. $4K for the 1200G, $2K for the phono-preamp & $2K for an Ortofon Cadenza Bronze.

There you are. Spent every dime you mentioned.
