It IS hard, I agree. There are many keyboardists out there that I think are good and I would listen to, but not "favorites" technically; my initial list involved the ones I thought of at the time. The lists I see on the thread make me want to go back and revise mine. I'd replace Rubinstein with Horowitz and add Oscar Peterson, for example.
In my mind the term "favorite" would apply to someone whose playing gets a response from me (visceral or otherwise), who I'm involved with as they play, or who I'd want instinctively to go see if they were giving a concert or to check into any new release they put out.
