Buying Knives
 
I have been looking at a good set of kitchen knives . Any opinions on the J.A. Henkels Zwilling Pro S ?

The Wustof is excellent and so is the Henkels Pro S and so are a couple of their other forged models.

The comfort of the handle as well as the balance also needs consideration.

Knives are surgical instruments for food.

My kitchen block has about 33 knives from 12 inch slicers and 12 inch chef knives down to 2.5 inch paring and decorating knives. I know I overdid it, but I like to fit the knife to the task and I'd be lying if I didn't admit to having a fetish for them. My left forearm is almost bald because I like razor sharp knives, and I check the sharpness frequently. I have had many of them since college--over third years.

I love my Shun. Pricey but they will last a lifetime and they're beautiful to look at.

I have a set of Sabatier K knives. French made, old school wooden handles.
Not overly pricey but well made and hold a nice edge

Which Shun? currently looking at them (per your advice:thumbsup:) and the Global line. The Shun edo has caught my eye.:tresbon:

I have the pairing knife, 7" utility knife, the 6" and 10" chef knife

I have a set of Wustof knives and quite like them. Better "feel" than the Heinkels I also have. Love the look of the Shun and have wanted to try them for quite a while. Some day!
