Got a nice roast today and cut this steak from it. This will be seared on a smoking hot cast iron skillet for just a minute on each side and 15 seconds around the edges.
IMHO this fish is only to be served very rare in the center. I have a mixed blend of my own seasoning to dust over a light coating of toasted sesame oil. |
