Home made chipotle rub (smoked the peppers myself) on pork tenderloin smoked over pecan and peach then seared to finish, with a white and yellow peach salsa, polenta, and lima beans with a JC Cellars 2006 Syrah,

Bill, looks great how did you prepare the polenta? Kinda reminds me of Indian pudding that a great Aunt used to make

Polenta translates as corn meal mush, but it's much more.

A forkful of the polenta layered with thinly sliced pork tenderloin topped with the peach salsa was sublime.

I am in mourning knowing that peach season is over.
