Country Pate' Anyone?

One of my favorite foods is country pate' (sorry - can't find the accent aigu), which is difficult to find in the U.S. and pretty much impossible in southern NJ. So, decided to give it try. Quite labor intensive and takes 2-days to complete. But, I hit upon a great recipe https://www.epicurious.com/recipes/f...agne-em-350966 and gave it a go. Voila......... turned out better than we could have ever imagined. Fruit, cheese, mustard (real Dijon, of course), cornichon, chutney, good bread along with good wine, cognac & port. Yum. Very much worth the effort and I'll be making another next week.

Well......... at my hourly rate it might be more than you would be willing to pay. Supposed to be nice weather the next two days, so will start the next one on Wed.

Pate de campagne #2 is in the oven. 2+ hours and then a bit more work before a couple of days in the fridge. Then cut up the baguette, open the mustard & cornichon and YUM (I hope.......... ;)).
