Well i have done quite a few but it has been a few years
I use equal parts of pecan and peach.
I use Shake's Honey Brine Shake's Honey Brine

Sounds great! We'll do the pecan/peach but will use a modified form of Dan Gill's or Alice Water's brine. Usually I combine the two as the spirit(s) move me.:D

I love smoked turkey!

Depending on size anywhere from 4-8 hrs.
