This is definitely the "meat-by-mail" time of year. I've gotten three flyers for same in my mail the past two days and probably a dozen since the start of the month. Read a recent short article on how much better the individual producers of meat & other food products do when skipping the middle-men food processors and sell direct. That, and we have a wider selection of better products, as well.

Was going to ask about the topping. Was thinking Roquefort, but that might be too strong. Your butter & truffle & fresh cracked pepper seems about right.

It was a rich meal and quite satisfying. I'll certainly buy more of it. That Allen Brothers Japan A5 Wagyu looks like it could get me in serious trouble. Will have to stay away from that site. Far too tempting.

Indeed. At $100+ per pound is definitely reserved for special occasions.
